Ingredients:

3 oz. Vegetable Oil
6 oz. Water
1 Tsp Black Mustard Seeds
1 Tsp Green Chiles Chopped
1 Tsp L G Hing
2 Tsp Chopped Cilantro
2 Aluminum Pans size 9”x6”x2”
Directions:
Step One: Grease the two aluminum pans with one ounce of oil.
Step Two: In a clean mixing bowl add 2 ounces of vegetable oil, 6 ounces of cook water, and whisk to combine. Gently stir in the khaman dhokla mix and gently fold in the oil mix until all is incorporated. Do not over-mix, otherwise the rising agent will lose its effect.
Step Three: Pour the batter into the two greased pans, half in each pan. Then place the two pans into a steamer, and close the door and steam for 30 minutes. Remove the steamed spongy dhokla pans and place them on a clean table and set aside. Cool the dhokla on a cutting board.
Step Four: Ina medium sized pan on the stove top, add oil over medium high heat. When the oil has heated, add mustard seeds, let it crackle, then add the chopped chiles.
Step Five: Pour the hot oil mix on top of the two dhoklas, evenly coating the top. Garnish the dhoklas with chopped cilantro. Cut the dhoklas into 2-inch squares.
