Joyful Eating at Parker: Cajun Fish Tacos

Parker Jewish Institute is proud of our culinary team. We encourage all Parker members, whether a patient/resident, visitor or employee, to eat a well-balanced, nutritional diet.
Today, we are sharing a recipe for Cajun fish taco. This flavorful, high-quality protein meal contains essential fatty acids and vitamins. The protein in fish is essential for building and repairing tissues, as well as for cell renewal. The omega-3 fatty acids in fish are crucial for heart health and brain function, and for reducing inflammation. The taco toppings in this recipe further enhance health benefits, by providing additional vitamins, antioxidants and fiber. This is truly a healthy, delicious dish.
Cajun Fish Taco Recipe
Sauce
1 cup mayo
1 cup sour cream
½ tsp garlic powder
1 tsp lemon juice (add as needed)
½ tsp lemon zest
Salt & pepper to taste
Combine all ingredients.
Fish
Tilapia
2 tbs Cajun seasoning
1 tbs salt
1 tbs pepper
Flour for dredging
Oil for frying
Tacos
Combine the Cajun seasoning, salt and pepper. Evenly sprinkle the seasoning mix over both sides of the fish.
Dredge both sides of the fish in flour. Deep fry , and set aside.
Garnish
½ tomato, diced
2 cups mixed green or shredded lettuce, chopped
½ red onion, diced
½ bunch of cilantro, chopped
Assemble
Add fish to the taco . Lightly drizzle the sauce over the taco, top with garnish, and then VOILA.
