Joyful Eating at Parker: New Delhi Chaat

The Parker Jewish Institute is proud of our culinary team. We encourage all Parker members, whether a patient, resident, visitor or employee, to eat a well-balanced, nutritional diet.
Today, we are sharing a recipe for New Delhi-style samosa chaat. This iconic north Indian street food is noted for its blend of crunchy and soft elements, its mix of hot and cold components, and its balance of savory, spicy and sweet flavors. Bountiful in nutritional benefits, this snack contains fiber, protein, vitamins and probiotics, which help boost digestion and metabolism.
New Delhi Chaat Recipe
Ingredients
¼ LB - Potatoes Skin on Boiled
1 Small - Red Onion
2 Small - Green Chilies
4 Springs - Fresh Cilantro
2 Ounces - Tamarind Chutney
2 Ounces - Cilantro Chutney
2 Ounces - Plain Yogurt
1 TSP - Chaat Masala
9 Pcs. - Plain Poories
3 Ounces - Fine Sev Crispies
1 Cup - Oil for Frying
Method
Dice the potatoes into ½ cubes
Deep fry the diced potatoes crisp in hot oil at 450 degrees
Place the fried potatoes into a clean mixing bowl and carefully, roughly mash them while hot.
Season it with chaat masala and add half of the chopped chilies and cilantro.
In a large platter arrange 9 plain poories apart.
Portion approximately one TBSPN of potato mix on each poori
Drizzle 1 teaspoon of cilantro chutney over the potatoes
Drizzle 1 teaspoon of yogurt over the cilantro chutney
Drizzle 1 teaspoon of tamarind chutney
Pour ½ a tablespoon of sev crispies
Sprinkle chopped cilantro, as garnish and serve
