Joyful Eating at Parker: Rice Kheer

The Parker Jewish Institute is proud of our culinary team. We encourage all Parker members – whether a patient, resident, visitor or employee – to eat a well-balanced, nutritional diet.
Today, we are sharing a recipe for Rice Kheer, a traditional Indian rice pudding. This delicious dessert provides calcium, protein and vitamin B12, supporting bone strength and muscle health. Some studies show that the rich starch in kheer acts as a prebiotic, and the slow-digesting carbohydrates in basmati rice can help replenish energy after exercise. Adding such toppings as almonds and pistachios can enhance heart health and help reduce bad cholesterol. Enjoyed in moderation, this tasty dish can bring a bounty of health benefits.
Kheer, an Indian Rice Pudding
Ingredients
• 1/2 cup basmati rice
• 1 liter full-fat milk
• 3/4 cup sugar
• 1/4 tsp green cardamom powder
• 5-6 saffron strands
• 6-8 almonds/pistachios (optional)
• 8-10 raisins
• Slivered nuts or silver varq (optional)
Method
1. Rinse, then soak the rice for 15 minutes.
2. Coarsely grind the rice (you can use a blender, food processor, spice grinder, mortar and pestle or even a rolling pin to break up the grains.)
3. Heat milk in a thick-bottomed pan.
4. Add the ground rice and cook on low heat until half-done.
5. Add sugar, cardamom, saffron and, if using, nuts.
6. Simmer until the rice is fully cooked and the milk thickens.
7. Portion the rice pudding into bowls or cups.
8. Garnish with slivered nuts or silver varq, if desired, and serve chilled.
Key Tips for Best Results
• Coarse Rice: Grinding the rice coarsely instead of using whole grains creates a creamier texture.
• Slow Cooking: Cooking on low heat allows the milk to reduce and thicken naturally without burning.
• Variation: Adding rose water helps to elevate the dish.
